This stunning cake is topped with rare hand-picked white woodland strawberries overnighted to us from Malaga, Spain. These tiny berries are only in season a few short weeks each year, and taste like little bursts of floral fragrant strawberry candy with hints of juicy ripe pineapple notes. They’re set atop a cake made with almond biscuit soaked in violet syrup for a delicately sweet floral flavor, with strawberry gelée and creamy vanilla bavaroise (Serves 3-4).
