Giraudi’s truffles

From the creativity of Giacomo Boidi come the pentagon-shaped truffles

Giraudi is a chocolate shop in Castellazzo Bormida (Alessandria, Italy), and its artisan, Giacomo Boidi, is a creative individual who loves to get hands-on with his work. This is evidenced by the fact that he was one of the first professionals to pair chocolate with cheese, and more recently, he has done the same with cauliflower from the Piana del Sele. The most significant novelty he presented in the 2024-25 catalog are the truffles: a product of French patisserie, first prepared by Louis Dufour in 1895, with a spherical shape and an appearance that, due to the bitter cocoa coating, resembles the namesake hypogeal fungus, which is precious in the Alba area, hence the name. In his interpretation, the truffles take on a pentagonal shape, reflecting the five points of the logo. There are four flavors: Tonda Gentile Trilobata hazelnut-dark chocolate, Sicilian pistachio-white chocolate, caramel chocolate with salted caramel crisp, and cappuccino (white chocolate and coffee powder).
